Christmas Special Plum Cake by Homechef Jyoti Bajaj

Ingredients:
  • 1/4 cup Pistachio
  • 1/4 cup dried black currants
  • 1/4 cup dried blueberries
  • 1/4 cup dried cranberries
  • 2 tbsp dried strawberries
  • 1/4 cup chopped cashew
  • 1/4 cup chopped raisins
  • 1/4 cup chopped almonds
  • 1 tbsp orange zest
  • 200 ml fresh orange juice
  • 2 cups GF all purpose / Normal all purpose flour
  • 30 ml egg replacer
  • 10 ml baking soda
  • 1 cup lukewarm milk
  • 1/4 cup veg oil
  • 1 cup brown sugar
Process:
First in a glass bowl add all the nuts n fruits add orange zest n juice and keep this soaked for overnight or as less as one hour or as long as for a week.
In another bowl add lukewarm milk n oil n give it a good whisk… now add flour, egg replacer, baking soda, Sugar and mix them well.
Add all soaked nuts and the juice which is drained from nuts.
Brush the baking tray with some oil and keep this for baking aprx 30-35 mins.
Check the cake with toothpick if it is coming out clean it means your plum cake is baked.
