Bani Sarmah celebrates the home coming of her son with a dish which her son loves. It is a fish dish with yellow mustard. Read the story to know the recipe.
The flavors of the day enhanced early morning. The day started with a phone call all the way from Delhi. It was a call from my son who informed he would be visiting Guwahati and will be staying during the festival of Bihu. It remained undecided till the 11th hour as he was busy with work, but then it was Bhogali Bihu after all, an occasion which we Assamese look up-to through out the year. So he prioritizing the traditional values more then his work he finally decided to come.
So after the initial exhilaration of the news of his homecoming, I realized I had to cook something special for him. I remember how excited he was a child during this time of the season. I used to cook delicious meals out of meat, fish, duck, chicken and so many other things. I remember one of his favorite dish was fish in mustard sauce, so today when he arrives I decided to serve him the same.
Well opening the refrigerator I felt lucky as we just got pabda or butter-fish which is a type of cat-fish the day before. I took them out and marinated it with salt and turmeric. In the mean time I made a paste with mustard Seeds, ginger and garlic. I added some chilies and a little bit of salt. Note addition of salt is important or else the mustard will taste bitter.
In the mean time the fish was ready to be fried. So I added some mustard oil to a pan and started shallow frying the fish. Once it was done I took it out and kept it aside. After I fried some sliced onions in the same oil. I fried it till I could see the color change to golden. After that I added the mustard paste slowly to frying onions and it was time to add water to the mixture.
When the masala came to a boil I added the fried fish and cooked it in medium flame for 3-4 minutes. Before I forget let me remind you to add salt as per taste. Once I added the sale I let it cook for another minute or so, and there it was my mustard fish was ready to be served. One more trick to make it tastier , just added a dash of mustard oil to the serving plate.
My dish was ready by the time my son arrived and smelling the aroma he directly went to the dining table and started eating the food. He was speechless till he finished reconfirming the fact that it is a tasty dish. Why don’t you too try it at home. The recipe is as follows.
Yellow Mustard – 4 teaspoons
Onion – 2 medium sized
Garlic – 5-6 cloves
Ginger – Half Inch
Salt – as per taste
Green Chili – 3 pcs
Green Coriander Leaves
Any Fish can be used for this recipe
Take the Mustard Seeds, Ginger, Garlic and the Chilies, Grind them to a fine paste. (Add little salt during grinding else the mustard will have a bitter taste)
Marinate the fish with salt and turmeric.
Heat mustard oil in a pan and fry the fish, once done take out the fish and keep aside.
In the same oil add the onion (cut into to small pieces) and fry well till golden texture.
Add water to the paste as much the consistency required.
When the masala comes to a boil add the fried fish into the pan and boil in medium flame for 3-4 mins.
Add salt as per taste.
Boil for another minute.
Transfer the contents to a serving bowl.
Before serving add a little uncooked Mustard oil and garnish with the coriander leaves.

মাছখিনি নিমখ আৰু হালধিৰে মেৰিনেট কৰক, এখন কেৰাহীত সৰিয়হ তেল ভালকৈ গৰম কৰি মাছখিনি ভাজি লব |
তাৰ পিছত সেই তেলখিনিতে পিঁয়াজখিনি যোগ দিয়ক (সৰু টুকুৰাত কটা) আৰু সোণালী ৰং লৈকে ভালদৰে ভাজক।
সৰিয়হৰ পেষ্টটো লাহে লাহে পেনত যোগ দিয়ক আৰু পেষ্টটো ভাজক।
পেষ্টটোত যিমান ডাঠ প্ৰয়োজন সিমান পানী দিয়ক।
যেতিয়া মচলাত উতল আহে ভজা মাছখিনি কেৰাহীত দিয়ক আৰু ৩-৪ মিনিটৰ বাবে মধ্যম জুইত উতলাওক।
সোৱাদ অনুসৰি নিমখ যোগ দিয়ক।
আন এক মিনিটৰ বাবে উতলাওক।
পৰিৱেশন কৰাৰ আগতে অলপ কেঁচা সৰিয়হৰ তেল দিয়ক আৰু ধনিয়া পাতৰে সজাওক।
